
Veggie Frittata
The recipe is perfect for about 4 people! Think of it like a pizza cut into slices. Each person gets a nice, big wedge of veggie goodness.
What you'll need:
6 eggs
1/4 cup milk (or any milk alternative)
Salt and pepper to taste
1 tablespoon olive oil (or any cooking oil)
About 2 cups of chopped leftover veggies (like bell peppers, onions, broccoli, spinach, mushrooms, tomatoes, etc.)
1/2 cup shredded cheese (optional)
Let's get cooking!
Prep your veggies: If your veggies are large, chop them into smaller pieces. If they're already cooked, that's even better!
Mix the eggs: In a bowl, crack the eggs and whisk them with the milk, salt, and pepper. Whisk until everything is mixed well.
Cook the veggies: Heat the olive oil in a large frying pan (one that can go in the oven if you have one) over medium heat. Add your chopped veggies and cook for a few minutes until they're a little soft.
Add the eggs: Pour the egg mixture over the veggies in the pan. Make sure the eggs spread evenly.
Add cheese (if you want): Sprinkle the shredded cheese over the top of the frittata.
Cook and set: Cook on the stovetop over medium-low heat for about 5-10 minutes, or until the edges are set and the center is almost set.
Finish in the oven (optional): If your pan can go in the oven, you can finish cooking the frittata under the broiler for a few minutes until the top is golden brown. If your pan cannot go in the oven, simply continue cooking on the stovetop until the eggs are completely cooked through.
Let it cool: Take the frittata out of the pan and let it cool for a few minutes before slicing it into wedges.
